The long-sought solution
For years I sought a way to keep my two most heavily-used kitchen knives sharp. I tried several department store sharpeners, none of which worked. I also tried a small wet stone I bought when I was twelve to sharpen my "Little Swede" pocket knife. But I could never get a good edge with it. So I checked out America's Home Kitchen, and they recommended the Chef's Choice sharpener. I bought the two-stage model (with honing and polishing wheels only, no beveling wheel) because my knives were still in fairly good shape despite my clumsy efforts to sharpen them with inferior methods. The beveling wheel makes sense if your knives are in rough shape or if you like to buy used knives. At first, the Chef's Choice sharpener rattled alarmingly, but once it broke in, it ran smoothly and quietly. It works well. I use it weekly now to hone and polish two stamped Henckels knives that get daily use. I can return both blades to factory sharpness (or slightly better) with just a few swipes; the built-in guides ensure that the sharpening angle is always right. Keep in mind that this knife sharpener works only with thin-bladed knives. It does not sharpen my old "Little Swede" pocket knife. But I'm satisfied with the purchase.

Basically turned my knives into lightsabers
We have some expensive 19 year old Wusthof knives that were never properly re-sharpened. They became pretty dull over the years and I was used to running my finger down along the blade with no fear while using and cleaning them. I finally decided we need a real sharpener and heard good things about this one. After one use, my santoku knife became razor sharp and I cut my finger while cleaning it. 5 stars!

Worth Every Penny.
As said elsewhere: Take the time to read all of the instructions. I was too hesitant with it at first but after using this every time I clean my knives the difference is like night and day. I have a few professional chef's knives and they benefited from using this but the real difference is in some of the cheaper knives I have around the kitchen. Pairing knives and other blades that get used regularly and had gotten beaten up over time suddenly now they are sharp as can be and returned to every day use. I'm giving this as a gift to several people for the holidays this year because everyone should have one of these.

Issues (Yes I read the manual)
First, the one I received was not new. In looking over the manual and machine I opened the magnet and found a significant amount of shavings. Someone used it and sent it back. Even so I gave it a try with my old knives. Two issues. First, as some had said it places scratches on your blades. Not sure how since there are guards but they do leave marks that cannot be removed. Second, it did reset the angle for the blade, but I could not get it razor sharp. In my opion using a handheld then a whetstone would be more cost effective and effective period without causing scratches. Maybe if I had a real new one it may have worked but the scratches are still a problem for those if us with expensive knives.

Works Well NOT Fast
I like this sharpener. I got tired of sharpening by hand while this machine is not fast it's faster than hand sharpening. Read the instructions! They are detailed and thorough and necessary. First time sharpening chef's knives will take a while to establish the new 15 degree profile. Start Coarse and draw the blade slowly though the guide. Allow 20-30 seconds per pass for an 8 inch knife. Make the same number of passes on each side. Once the bevel is formed repeat the process on the Fine side. Once the edge is established it can usually be dressed on the Fine side only.

Excellent sharpener for Asian Knives
So far I have used it to sharpen Shun knives and a Joyce Chen Chinese cooks knife. My Shun knives were not really dull, so I only used stage 2. The Joyce Chen Chinese cooks knife (like a lightweight cleaver), had a bent section on the edge of the blade. (Bone damage). I used stage one until it formed a burr along the entire edge of the blade, then polished it in stage two. In stage one it ground off the bent section leaving a tiny gap in the edge, but, it is now straight. I am sure in subsequent sharpening, that will disappear as well. At present have not converted any of my Western knives to the 15 degree Asian edge, but, My forged Santoku is thin and sharp, and is a idea candidate for Asian edge conversion. So far I have found nothing to complain about. It is a well made precision Blade sharpener. Highly recommended.

Great, great sharpener!
This is a great sharpener! Because it is sharpening your knives to an Asian type of blade, it is changing the angle of the honed surface. So the first time you use it on your typical chef's knives you may want to run it through a few extra times. But once you are done your knives will be razor sharp. I try to keep all of my knives fairly sharp, but now there is no comparison to how sharp they had been in the past. I hone them every few times I use them with a honing rod, and they are super sharp for a long time. When this one goes bad years from now, I will buy another. It's that good.

Worth every penny.
If only it had the final stage polish strop function I'd give it a glowing 5/5 stars....But it gets a very very sharp edge incredibly well and fixes chips quite well. Great for both asian blades and western blades (if you want a 15 degree edge). After following the instructions, I took an old belt and stropped the blade 15-20 passes (very easy to do...look it up on amazon) and I was shaving the hair off my arms.... 4.5/5! worth every penny

The best I have tried so far - excellent product
I only have Japanese knives, mostly Tojiro and Global, with a Kai Shun in the mix. Apart from their specific profile and edges, part of the trouble with these knifes is that because they are very hard (at least Rockwell 61) they are also very difficult to sharpen well (the benefit being that they keep their edge for longer). I have tried several methods for sharpening them: specialised ceramic stones, traditional and ceramic steel, even a special Tojiro sharpener. I got OK results only and with a lot of effort. The Chef's Choice sharpener is different: you do need to re-hone (in slots 1) the Tojiro knives for a while as I believe that their angle is slightly different (16° instead of 15°) but once you've done that and done the polishing in slots 2, you do get razor sharp edges with comparatively very little effort. Global knives are dead easy to sharpen and in most cases do not need re-honing. The sharpener itself is very solidly made and quite heavy, which means that it does not move. it does not seem to wear out the blades (which is why I stayed well clear off popular sharpeners with a V cut: they work, but they also damage your knives very quickly). The diamond abrasives do the trick even on the Tojiro and the Kai Shun. I leave the sharpener plugged in in my utility room, this way when a knife needs sharpening it's done literally in under 30s (once they have been re-honed, maintenance is only a matter for 3 x 3-5s pulls on each side in slots 2, depending on the length of the blade, and then about 3 quick pulls. Obviously for one edge blades you only use one of the two slots for each stage. Try it, you won't regret it!

Sharpens well but has marked my knives
Only just got this so can't comment on how it will fair over time. Practiced on a couple of old knives to see how it worked and was easy to use. Sharpened up my I O Shen knives in slot 2 and it has improved the sharpness back to how I remember them being when they where new with no obvious damage to the blade edge. It has however made very light scratches all the way down both sides of the blades. They are being made by the plastic guides and not by the grinding wheels, the scratches are very light but over time I imagine they will get worse. After thinking about how much the marks bothered me I've decided to stick with it as the sharpness they give is good. My knives will get scratched over time with use anyway so I'm going to have to live with that.

Amazing!
Wow!! Wish that I had purchased this years ago, but kept putting it off due to the price. If is worth every penny. I sharpened my dullest knife and it is so sharp that slicing garlic paper-thin is a breeze!
