I'm using mine for chicken tendies and onion rings, and I'm sure more in the future.
Edit 6/8/2022: Just made a perfect hamburger in a saucier pan! The high walls of the pan combined with my medium sized splatter screen meant almost no splatter on my stovetop either. I decided to start making my own onion rings (that is, buying frozen ones and cooking them properly. Like I'm going to start from scratch. Ha ha.) One of the benefits is that I get to cook them in healthy olive or avocado oil instead of the canola oil that fast food places use, and they often cook in the same tub of oil for days! But that kind of oil is expensive. I succeeded with a large, deep skillet, but I used a lot of oil, to much to make this work from a financial point of view. If only I had a heavy, safe, but easy to move around deep pan that would help me save on cooking oil. Most pans are too shallow to make my kind of cooking with oil safe, and sauce pans make it hard to access what I'm cooking. After all, I need to get to what I'm frying with my tongs and flip them quickly if necessary. So, I bought this half-way-in-between pan that is of the "saucier" genre of pans. I'd actually never heard of "saucier" pans, and I really didn't care because it just met the specs that I was after. Now, I can safely cook my onion rings (and chicken tendies) in oil deep enough so that they sort of float, and they don't easily get scorched before I flip them, and since they're floating a bit, it is way easier to get under them with my tongs to flip them. I figure this pan will pay for itself in reduced trips to fast food places for onion rings. And, since the pan itself, without the lid, is rated at 500 degrees in the oven, I can experiment with frying to start and finishing in the oven. I also hope to plan brazing small roasts and finishing them in the oven too. What an incredible cooking swiss army knife pan this is, and I'll likely never use it to make a sauce.

I started looking into Viking because of former royal chef Darren McGrady's cooking videos on YouTube. I noticed that the videos often feature subtile product placement, such as zooming in on the logo on a pot. So I learned that Viking is maybe the premiere maker of top-end restaurant cookware, and that they offer several lines differentiated by materials, engineering and price. The Culinary line is designed specifically for the home cook. The outside of the saucier is hard-anodized aluminum; the interior is a highly heat-resistant PFOA-free non-stick coating oven safe to 400 degrees F. I am not sure how the nonstick coating is made, except that it is triple layer. I am sticking with wood or other non-metallic implements. I was looking for a 3 qt. saucier specifically because of the differences between it and the typical fait-tout or saucepan. This thing is very solid, about 1/8 in thick. There is a stainless plate on the bottom that helps with heat distribution. The vessel heats up almost as quickly as my solid copper fait-tout, heat distribution is excellent, and you may find cooking something for the 100th time is, indeed, different. For instance, making a roux for gumbo I did not have any trouble getting that nice dark brown color without scorching. I've been making omelets in it even though I have at least six other pans I could use, because the result is almost magical. Anyhow, for the price-- under $130 or so-- you can't go wrong. Very fine piece of equipment and I keep returning to their web page to see what other elements of my batterie de cuisine I didn't realize are missing..

Viking Quality All the Way
Great pot. I got this to complete a larger set I'd bought recently. This whole set is quality through and through. Perfect thickness, weight, lid fit, stackability and heat conduction. I expect these pots to last for many years, highly recommend.

As good as All Clad but less expensive
Great for use on induction stovetops. Good quality, even heating. My only complaint is that Vicking doesn't have the same selections as All Clad, very limited choices in single purchase pots.

Elegant in simplicity , quality and performance.
I love my new Viking pans. Treat them nicely and don't apply too much heat. They don't need it. Handwash is preferred, but they are ok in the dishwasher. I like to handwash them - after all, they are expensive. Treat these tools with respect. They transfer heat quite well. I love the handle and the logo and I feel a pleasant sense of pride and exclusivity when I use them. I brag about them to my other foodies. Poor bastards...HA!
