Excellent product if you can stand the price.
So far, I mainly use this pan to sear steaks on an induction plate. Heats more evenly than other pans I've tried and gets the job done nicely. The handle doesn't heat much even at searing temperature - may be a function of the induction plate as opposed to a regular stove. I haven't seen discoloration from the induction ring like I have on Nuwave pans, et al, and the All-Clad cleans easily for what it is. I only gave it a four star score for cleaning, as it is a stainless pan, not non-stick of course. I didn't want a non-stick coating due to the high heat when searing meat. At least the older Teflon pans would lose their coating and kill your canary if you tried that. I didn't want to take any chances, there. It even happens to nest well with my Henckels fry pans.

I held up updating my review until I found out what the company would do. They replaced it. This is a good company. They stand behind their products. I now intend to update all my pans with these. Thanks, All-Clad! Original review This warped very soon after I got it. I have no idea why, but the result is that it is bowed a the bottom, so the center is higher than the periphery. That makes it hard to cook with. It took me a long time to get around to it but I finally sent it back to All-Clad today. If they replace it, I will edit my review to increase the rating. If not, I will edit it to decrease the rating. For comparison, I had a Le Creuset pot that I used innumerable times until after thirty years it was chipped. I contacted the company, and they sent me a new one. That was stellar product support. Hoping All-Clad stands behind its products too.

The best pan!
I absolutely love this pan. I’ve always had nonstick hard anodized cookware and was a little worried about going to a stainless pan, however I’m tired of how scratched up the non stick surface gets over time and frequent replacements. I had some concerns about cleaning this after reading other reviews. After researching proper use and cleaning I went ahead and ordered. It heats so fast and evenly distributes the heat. I seared shrimp also skin on chicken thighs it created quite the build up from the seasonings the kind of buildup that doesn’t scrape with the spatula. i poured a little wine into the hot pan to deglaze and clean up was so simple. This is an expensive pan compared to most but worth the expense I’m so happy I decided to give it a try! Definitely going to ordering more of the all clad copper core collection!

Big boy cookware
This is the first piece of All-Clad Copper Core cookware I have owned, and it is by far the best piece of cookware I have ever used. Be mindful that the different lines of All-Clad have significant differences. For example, the MC2 line is lighter, but at the expense of durability (note the limit on the temperature at which the MC2 pans are oven-save) and heat distribution. I didn't want to have to deal with the care of the Cop-R-Chef line, with its exposed copper outer layer. But I did want copper for its excellent heat distribution. To give you an idea of my perspective and how I view my cookware, I've been cooking a while, and have studied French and Northern Italian cuisines. I don't believe in having pumpkin-shaped soup tureens cluttering up my life, and I have Global knives that I keep razor sharp, but only a few that I use to cover everything. I sear/braise/roast primarily for main dishes, with the occasional stew. This pan exactly met what I hoped for; a good pan to serve as my mainstay for daily cooking, that would be durable and hassle-free while giving me good results and allowing me to improve my cooking that much more. It replaces a Scan-Pan nonstick that served me well for over 3 years before its nonstick properties started to fade, and I have to say that I like the All-Clad better for everything but cooking eggs. But you have to know what you're doing with one of these pans to get the best use from it. Some will complain about discoloration of the stainless steel; they are using too much heat. Others complain about sticking; they aren't cooking the way you need to, with a stainless steel pan. So a few things. One, these pans transfer heat very easily. This also means that even though the pan will distribute heat very well, it also won't dissipate that heat. So you don't need to heat it as much as with an aluminum pan...trust me. I found myself turning the heat down the first few times I worked with this, to get the cooking results I was used to, sometimes by as much as one-third. Two, you have to use oil. Not much, and not extra-virgin. The solids that give EVOO it's green color scorch, and the flavor benefits of EVOO go bye-bye when you heat it. Use yellow olive oil; it's very heat stable and healthy for you as well. Get the pan hot first. Then add the oil, and let that get hot...it should start smoking just a bit. Then add the food. Three, you have to recognize that the food *will* stick, at first, and that this is good. The maillard reaction (aka, 'browning') requires contact with heat, and the way food will latch onto this pan (at first) is wonderful for this. This also produces the fond that you want for making sauces. But remember...don't crank the heat, or that fond (and the crust on your food) will scorch. When the food has browned, it will automatically release from the pan, just like it had never stuck in the first place. In fact, this is a great way to know how far along the food is. If you're cooking duck, beef, pork, etc...this is a good thing. If you're cooking something that should not brown (an omelette, for example), then why are you using this pan? Use a non-stick for that. Now the really good news. It's stainless steel. You don't have to baby it, as long as you ease up on the heat. You can scrub it like crazy to get it clean. No, it won't look as nice as it did the day you unpacked it, unless you are willing to spend an awful lot of time working at it. But it's a pan...it's for cooking food, not for hanging around your neck like a piece of bling. Don't be ashamed if it shows that you use it :)

Definitely worth the premium for All-Clad copper core!
I tested this pan for 6 months before I wrote this review: If you want the best in cookware this performs as expected always. Note: More expensive copper option is worth it if you want total control of the temperature of your pan! Highly sensitive to temperature. (Pan reacts very quickly cooling or heating and NO cold spots within the pan) watch it that you don't burn your food. The handle is very comfortable to hold (this is great if you cook for hours), All Food will stick to these pans with improper technique so remember in cooking school when using these you need to use oil, butter or ghee so food does not stick (like using Ghee for eggs or omelettes) No staining or tarnishing if cleaned immediately with non-abrasive cleanser (Easy to clean). These All-Clad Copper Core pans are high quality and are the best. I have been cooking successfully for 33 years and worked in the kitchens in Paris France, and I LOVE these copper core pans. I use this pan daily. My dishes come out perfectly (Like beautiful pancakes every time) and many of my friends that I cook for end up buying these copper core pans for their own. I am very happy I bought this!!!!!!!

Good price for quality
Bought like new / used from seller and surprisingly came not bad at all. The inside had a scratch about 2 inches long but with a little bar keeper and some elbow sweat it faded out enough to look like it’s been slightly used. Nice heat transfer with the 5 core all-clad.

Fantastic
Best stainless pan I have ever used. BARKEEPERS FRIEND WILL BE YOUR BEST FRIEND. The way that the copper changes colours upon first cook is really cool. Performance wise it’s the best of the best, crazy fast heat up time and great heat distribution throughout the pan! 10/10 worth every Penny just don’t expect it to stay looking like a piece out of a treasure chest after multiple uses!

Looks gorgeous and has raised my level of cooking great meals
Added this 12” pan to my 10pc copper core set. I would say to any looking at this copper series to check out YouTube for the many demos and reviews. Ensure you know how to heat your pan properly before you add your meal. I love the even heating and control you have. Knowing how to create the fond adds a new dimension in my cooking. This pan looks and cooks great. It will certainly be passed down the family line for the next generation to enjoy.

My favorite pan
Looks and feels like the high quality tool it is. Slotted handle stays cool and nub on bottom gives great feel in the hand. The size and weight make it a real pleasure to use. Really, it feels like you could throw it into a tree: if you sharpen the edge you could hunt as well as cook your supper with it. Especially fun for high, direct heat cooking and even then cleans beautifully. Highly recommended for serious kitchen gearheads.
