Cuisinart MCP33-30HN MultiClad Pro Triple Ply 5.5-Quart Saute Pan
I love this pan. Twenty five - thirty years ago I cooked with nonstick aluminum, Stainless steel, carbon steel, and cast iron on an electric stove. I only liked the nonstick aluminum. But had to buy them every couple of years cause the non stick wore out (just like today). Roll forward till now. I'm using a Nuwave portable induction cooktop and love it. I only use my stove if I need a second pan going. Which is hardly ever. I've been using T-Fal nonstick for induction and the nonstick has wore out. These pans I bought are to replace two T-Fal pans. I've recently bought a De Buyer 11" skillet and this Cuisinart pan listed above. And I also know why I had so much trouble all those years ago. If you want to know the differences then read on. This Cuisinart MCP33-30HN MultiClad Pro Saute Pan is much more forgiving than the De Buyer carbon steel. Before I go any further. My problem from before. Note I said my problem. Not the pans problems. I was using too high heat settings. I must use less heat on both of these pans than what I can do with nonstick aluminum pans. The new pans I seldom go higher than medium (250-275 degrees vs 375-425 for T-Fal). As long as I keep the heat lower, but while still browning, the Cuisinart is very easy to clean afterwords. In other words if you haven't really blackened the bottom of the pan then a little water and a spatula will clean the pan nicely. Contrast that with the De Buyer carbon steel. While I'm still building up the nonstick by seasoning and using the pan, its touchy. I bought the De Buyer pan mainly for eggs. If the pan is too cold eggs will stick. If the pan is too hot eggs will stick. I found a very good video online showing how to tell the right temp by only using butter. Now. Eggs and omelettes slide around easily. I got bold and tried a piece of meat. That striped off the non stick and I had to start over. I don't want to re-season the De Buyer pan every time I cook something other than eggs. Maybe that won't happen later on. I included info on the De Buyer in case you are trying to decide which to buy. I hope that helped. Of course you can use your pans how you see fit. But I'm using the De Buyer for eggs and maybe other delicate stuff and the Cuisinart for meat and everything else. Especially one pan meals. I will be replacing the rest of those T-Fal pans with Cuisinart. One final comment about induction (small coils) and larger pans. Lids are very important. IMO a six" induction coil is similar to the small burners on my electric stove with an 11" or so pan. The middle gets hot, the edges don't. You can help the heat spread out by using a lid. That traps the heat in the pan and helps to spread the heat to the edges of the pan. Lastly. If you can only afford one good pan in your kitchen then, IMO, get a saute pan with lid. Saute pans have always been my go to pans. Are they yours?

Very Happy
I've had this for four months now. It is excellent. Performs great on our induction cooktop. Because it is so versatile, we use it several times a week. There were a number of negative reviews about the non-stick coming off. We're careful, but we don't baby it, and we've had zero issues. Very pleased with this product. Gave it four star because on first start up it does get hot spots, but that is very common with induction and to avoid it you would have to make a much heavier product. One of the nice things about this is that it is heavy enough to fix those hot spots within a minute or so but light enough to be a pleasure to use and easy to clean and store.

CuisinartMCP19-18N 2 at saucepan with lid
I LOVE this new addition to my kitchen!!!!! My husband blessed me with a new induction cook top when he renovated my kitchen last year. I was stunned to find that my stainless cookware WOULD NOT work with it, as I had previously believed the "if a magnet sticks to the bottom of the pan it will work on induction cooktop" theory. Not so; I had a grand total of one pot that worked. Every other one, including skillets, dutch oven and stockpots, failed miserably, despite being triple clad. This pot was purchased to help complete a set of Cousin art cookware, all of which perform beautifully on my new induction cooktop. I couldn't be more pleased. A couple of tips make it even better. First, you never need to cook at high temps. These pots and skillet have an inner aluminum core that wraps up the sides of the cookware and transfers the heat from both bottom and sides to the food. Cooks faster at a lower heat. Second, when sauteing or frying, put a small pat of butter, not margarine or spray, in the pan as it heats. Nothing sticks if you do this, at least it hasn't for me or my husband. Third, when you buy, be sure you get the pro version of the cookware...it makes a difference. Every piece can be used in you oven as well as the cooktop. It is oven safe to 550 degrees. I have a couple of pieces that are nonstick, but I doubt I will use them in the oven, as they're skillets. Finally, I wash everything with nylon pad in hot soapy water. Will likely use the dishwasher on occasion, but it is usually easier to clean up as we cook. Old habits die hard! My husband says he thinks he a better cook with the new cookware and the induction method. We both love the Cuisinart!

No damage from burned foods!
I burned my yakatori sauce in my 3 qt pan and thought that was the end, I would have to throw it out. But I soaked it with Dawn Powerwash and used the scrubbie side of my sponge, and it came clean and almost looked like new! There were some scratches from the sponge, but the pan is clean and was salvaged! When I bought it I really wanted an All Clad pan but couldn't afford it, so I bought the next best thing. I have used it hundreds of times and love the even heat, the lid and obviously, the way it cleans up. I highly recommend it!

Excellent pot that matches performance of much higher priced clad cookware.
I have many Allclad pots and pans and one Demeyre pot that are 3ply clad. They all cook flawlessly if you understand how to use them correctly but the price is pretty steep. The Cuisinart MCP series for the price beats these other two hands down. I have a 16 quart and a 3 quart pot in the MCP line and they are equal in performance to the others. I don't like the finish quite as much and the lids aren't as good but who cares at 60% less $$$. (Made in China by cheap labor). If you can afford USA made Allclad get them. You won't be disappointed. If you are on a budget, save up and get these. Make sure they are clad and not the ones with a welded on bottom. There is a huge difference.

Works great
I read and took note of all of the reviews and felt this pan was reasonably priced. I did take note of the fact that one reviewer said not to use wooden tools and was a little concerned when another reviewer said the pan had a cold spot in the middle on the induction cook top in flex mode. I have a top of the line Bosch induction cooktop. I used the Auto chef, and Flex function to join the zones. Put an egg at the top, middle and bottom of the pan once it signalled it had come to heat. They all cooked at exactly the same time and was pleased to see how easily the eggs came off the non stick surface and impressed that the handles of the pan stayed cool. So far this is working perfectly for me. I did find it useful to use the recommended temperatures in the stove top handbook. Typically cooler than I would have normally cooked at. I have now done a rare steak, pancakes, caramelized onions and panko battered fish filets. All cooked perfectly and clean up is a breeze. particularly impressed with the panko battered fish. Thick filets cooked perfectly on induction 3 (as recommended in stove top manual) with a crisp panko exterior and a nice golden brown colour.

Big Pot
This is a great quality pot for a family that thought the 8 quart pot was big until it wasnt. Its a big stainless pot, its not light but its a big pot. It has great conductivity and heats evenly, even though its larger than the burner your putting it on. This does take a bit longer to prepare with due to the thermal load but it beats using two to get the same job done. I wouldnt put this pot on a old electric coil burner it might be a bit to weighty when full. I will never buy another one for myself again, its a lifer.

Good stuff
Wish it had a glass cover with steam outlet like some other brands, just minor annoyance, other than that pretty happy. Great size and really flat bottom for the stovetop.
